Winemaking
Fruit was harvested and crushed to an open fermenter, and pumped over daily on skins for a period of 12 days until dry. The ferment was then pressed to tank where malolactic fermentation was completed within 5 days. The wine was then racked to 100% French oak, 40% new, and matured in barrel for a period of 16 months. The wine was then racked to tank, and bottled in November 2021.
